Simple St. Patrick’s Day Desserts

Top of the morning, and happy St. Patrick’s Day! At the end of the rainbow you’ll find two simple no-bake desserts, sure to put you in the St. Patrick’s Day spirit. 

 

1. Lucky Leprechaun Cereal Bars

The first of these is our Lucky Leprechaun Cereal Bars. For this recipe you’ll need:

  • 2 cups of cereal
  • 6 tablespoons of nut butter
  • 6 tablespoons of a sticky sweetener

We based our recipe off of the one found here.These cereal bars are incredibly versatile, so you can mix and match ingredients of your choice. We used rice cereal, peanut butter, and honey.


To make these cereal bars special for St. Patrick’s Day, you will also need:


Start by lining a 9x13 baking pan with wax paper. This recipe is sticky, so lining your tray will cut down on mess and clean up. Next, scoop 2 cups of your preferred cereal, along with your marshmallows into a large mixing bowl and set aside. 


After that, measure your chosen nut butter and sweetener into a separate pot or bowl. Since these ingredients are so thick, they need to be warmed before you can stir them together effectively. If you choose to warm them on the stove, use a low heat and stir continuously. If you would prefer to use the microwave, use low power and 10-20 second intervals until liquified. Stir your butter-sweetener mixture until it’s combined.


Now you can add your cereal and marshmallows to your mixture. Your nut butter and sweetener mix is the glue that will hold everything together, so make sure that all of the cereal and marshmallows are covered, or they’ll crumble apart when you’re done. 


When everything is properly coated and combined, transfer the mixture to your prepared baking pan. Press the mixture firmly into the pan. If you want to avoid getting your hands messy, you can use the bottom of a glass or another layer of wax paper to press the cereal treats together.


Let the pan cool in the refrigerator for at least 30 minutes before moving on to the next steps. Once chilled, drizzle a layer of green icing over the cereal treats and sprinkle with rainbow jimmies and shamrock confetti. You can return them to the fridge to chill some more, or serve right away.

2. Shamrock Shakes 

Now that you’ve made an appropriately-festive St. Patrick’s Day snack, you need a drink to go with it! We recommend some homemade Shamrock Shakes. If you want to make yours just like a certain fast food chain, go right ahead and use vanilla ice cream, green food coloring, and mint extract. Or, if you’d like to make things easier for yourself, just use mint ice cream. 


Add 1 ¼ cups of milk and 2 cups of ice cream (along with dye and extract, if needed) to your blender and blend until combined. Keep in mind that this recipe makes 1 serving, so if you’re looking to share, you’ll need to multiply your ingredients accordingly. 


Once blended, pour into chilled glasses, and top with whipped cream and Shamrock Sprinkles. 


Enjoy your treasures at the end of the rainbow before they disappear!
